First of all: Be a Mexican (*joke*).
Lets get serious: There are 5 different kinds of Tequila: White, Young, Aged, Extra Aged and Ultra Aged.
Each of them has its own notes and flavors depending on its production and aging process. When a Young or White Tequila has contact with oak wood during a period of time, we get the Aged Tequilas.
White and Young Tequila is perfect as an appetizer as it stimulates salivation and therefore, increases appetite. The notes are herbal, sweet and a little spicy. Therefore, citric salads, seafood, sushi are perfect pairing. This kind of tequila is used to make different margaritas or palomas.
Aged Tequila has more complex notes, therefore its flavors are softer and more balanced, more related to wood, vanilla, dry fruits, sweet pepper and clove. This tequila is the perfect combination for your Mexican favorites and spicy steaks.
The Extra Aged Tequila has a longer processing period; therefore toasted wood and vanilla are the most prominent notes. It is recommended to drink with strong flavored Mexican dishes like mole and steaks with high fat content.
The Ultra Aged Tequila has more highlighted notes related to chocolate, vanilla and dry fruits. This tequila is the ideal pair of a chocolate or vanilla dessert. Combine it with a little coffee sip or a nice Cuban cigar.
Drinking Tequila in Cancun during your vacation and tours is a Must!
